Soup Night.. and Why aren't you blogging?

When the temperatures finally drop below 70 degrees.. the Lindblom gals get in the soup makin' mood. So... every Sunday evening we each make a pot of soup and gather for "soup night". Already this season we have had some pretty amazing soups- and up until tonight, my favorite has been this really yummy chicken and rice soup Wendi made a couple weeks ago. But, tonight... ding ding ding.... ladies and gentlemen... we have a new winner:

Behold, the Chicken Enchilada Soup!

It seriously tastes like sour cream chicken enchiladas. Yum. Double Yum. Im gonna dream of you tonight, yum.

And as i was feeling about ready to pop from 3 bowls of soup and one ginormous fluffy homemade roll ( courtesy of JoDee!), Jolie (amid tears from being kicked "in the wrong place" - as if there were a right place to be kicked- by a cousin while rough-housing) says, " Mom, when are you going to blog again?"

Random... yet necessary nudge ...time to get back on the blog horse.

Here is the recipe for my new favorite soup:

Chicken Enchilada Soup

3 chicken breast halves, cooked and shredded
1/2 cup diced onion
1 clove garlic, minced
1 quart chicken broth
1 cup masa harina {a very fine corn flour mix used to make corn tortillas, which can be found in grocery stores}
3 cups water, divided
1 cup enchilada sauce

2 cups shredded Cheddar cheese
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon ground cumin

In a large pot cook the onion and garlic in a small amount of olive oil until onions are translucent. Pour in chicken broth.

In a small bowl, whisk together masa harina and 2 cups water until well blended. Add the masa harina slowly, whisking constantly, until combined.

Pour into the pot with the remaining 1 cup water, enchilada sauce, Cheddar, salt, chili powder and cumin. Bring to a boil.

Add shredded chicken to the pot. Reduce heat and simmer for 30 to 40 minutes, until thickened.
Hint: This soup thickens quickly. If you store leftovers in the fridge or freezer have some extra chicken broth on hand to thin it out.
